What is Ghee?
Ghee (a special type of clarified butter ) is butter that is slowly heated to separate the water and milk solids : what remains is a “cleaner” fat, stable during cooking and with a full flavour.
It's an ancient product with a thousand-year tradition , created for better preservation and cooking, when refrigerators, refined oils, and modern shortcuts didn't exist. Today we're rediscovering it for the same reason: it works .
The recipe originated in Indian kitchens, and the product was (and still is) considered extremely precious and sacred. But our grandparents also knew this and cooked butter to preserve it without refrigeration.
Product storage
Ghee can be stored outside the refrigerator.
Many of you have asked. Here's the answer and why.
Ghee traditionally originated as a special butter that lasts a long time. Our grandparents knew this, and to preserve the most valuable part of the milk (the cream that rises, later transformed into butter), they cooked it. Refrigerators didn't exist, and ghee could be stored for years.
Today, we cook our butter (high-quality and organic) at a controlled temperature for many hours so that it can be preserved NATURALLY for years. Keep out of the fridge .
This is tradition 🥰
The quality of our Ghee
We weren't looking for just any ghee, but Carnivore Company Ghee , a unique product that stood out from the others on the market.
Its unique features are:
- Organic and from pasture-raised cows : real, clean raw materials, no frills.
- Just one ingredient : organic butter obtained from cream .
- Cream from the surface = the most precious part of the milk : it is the cream that rises naturally during the night, not centrifuged cream (which is a "waste" product). In short: here we have the "old-fashioned butter", the best of all.
- Unique, extraordinary taste : try it and you will be amazed... our Ghee is really good!
How it is prepared
Our Ghee is the result of years of research and testing, created by people driven by passion. The exact recipe is obviously a secret, but we can tell you this:
- The cream is carefully selected (we use cream from cows grazing in Normandy and Bavaria , the best in the world). It is a cream from the surface, not centrifuged.
- Butter is made (in our case we repeat: organic from skimmed cream ).
- It is cooked at a controlled temperature for a precise period of time.
- The milk solids separate and are removed, we no longer have lactose and casein .
- It is carefully filtered, obtaining a clear, golden fat.
You can recognize our Ghee as soon as you open the jar and smell it...and you know for sure when you taste it. It's not just any ghee.
Why choose ghee
1) Cooking: stable, practical, “no drama”
If you cook often, you know that not all fats behave the same way when you raise the temperature.
Ghee is prized because it is more heat stable : perfect for pan-frying, baking, browning, eggs, meat, vegetables.
And yes: it is also a concrete alternative to seed oils for cooking, and in "intense" cooking it can even be preferred to EVO oil (which remains poetry raw).
2) Taste: a nut and everything changes
Ghee doesn't "cover": it rounds out . It gives that buttery, toasted note that makes even simple dishes feel hungry again.
3) Ancestral Bulletproof Coffee: The Tribe's Ritual ... Seeing is Believing 😋
Add a heaped teaspoon of ghee to hot coffee and blend/stir vigorously. You can also add 2 scoops of our collagen .
The result: a delicious, fragrant, and creamy coffee that gives you energy and keeps you full for hours.

Everything you need to know about our Ghee - Organic Clarified Butter from grass-fed cowsGhee is clarified butter: the butter is heated and the water and milk solids are separated, leaving a purer, more stable, and full-flavored fat.
Butter also contains water and milk solids. Ghee is the concentrated part: more stable during cooking and with a smoother consistency.
It is also stable during cooking and holds up well to high temperatures: it is therefore also perfect for cooking due to its high smoking point and because it does not oxidize.
Keep it out of the fridge, in a cool, dry place, away from light. It can last for years. What a treat!
Just one: organic butter made from cream. Fine. No flavorings, no additives.
It is the cream that naturally rises to the surface of the milk: an “ancient” and more selective method, which produces a richer and more fragrant raw material.
Because it adds more aroma and roundness. The difference is noticeable in the final taste: it's not a neutral, flat ghee; it's a ghee that leaves its signature on the dish.
Because countless experiments were conducted on the process, timing, and temperatures to achieve a precise profile: buttery, clean, with a delicately toasted note.
Yes: ghee is widely used precisely because it is stable during cooking and withstands high temperatures well, ideal for browning and sautéing.
Yes: many people choose it as a practical alternative when they want to avoid more delicate fats that are more sensitive to the heat in the pan.
Yes, especially for "intense" cooking (very hot pan, searing, oven). If you like, extra virgin olive oil is also perfect raw as a finishing touch.
For cooking, it's best to leave the extra virgin olive oil aside.
They're two "tribal" fats: the same principles (real, satiating, practical fats) but different in character. Tallow is more neutral/strong, while ghee is more buttery and aromatic. You can use them together or alternate them.
